I recently bought a box of coconut milk because I was very curious about how it is. I was pleasantly surprised to see that it had a buttery consistency, just as I needed for the ice cream recipe. Something very good and creamy came out and I will definitely use coconut milk for other dishes as well. I already have many ideas. Try it too!

This is another recipe I tried with Oana. I recently drank matcha latte at a Japanese restaurant, Yuki, which I highly recommend. It's amazing! We kept thinking about this latte and we wanted to try to make it at home because it is so good! I hydrated the coconut flakes overnight, Oana brought the matcha powder, I found this recipe and I tried. We really liked the result and have been drinking ever since. I recommend a matcha latte in the morning instead of coffee or tea, at least sometimes. Or you can drink it after dinner when you feel sleepy. It's a very good energy booster.

It is three times stronger than a normal green tea because matcha powder contains the whole green tea leaf, not just the aroma it leaves after it is infused in water. The powder can also be used in cakes and ice cream, as a natural dye and for flavor. Imagine a dessert that gives you energy, but from that good and healthy, not a baby rush that faints after a while. Great, right?

250 ml. hot water
250 ml. homemade coconut milk
1-2 teaspoons matcha
2 teaspoons of natural sweetener such as maple syrup, honey, etc.

30 gr. coconut flakes
250 ml. the water

Preparation time: 10 minutes + 12 hours while moisturizing coconut flakes

First we prepare the coconut milk. That's what we do the day before. In a small bowl put 30 grams of coconut flakes over which we pour 250 ml. of water. Cover and keep outside or in the refrigerator overnight. The next day, put the contents of the bowl in the blender and blend for a few minutes. Strain and get the coconut milk. It doesn't keep in the fridge for more than a day, so it should be consumed the day I made it.

Also in the blender, after washing it a little, we put the coconut milk, hot water, matcha and maple syrup, or whatever we choose as a sweetener. Blend and ready matcha latte! It will make a little foam. We pour it into cups and serve hot.


Homemade chocolate candy

If you have children, you probably know that sweets should always be present in your pantry. But how can you avoid having to buy sweets full of preservatives, dyes and everything all the time? Here is a very simple solution: homemade chocolates, the ideal alternative to commercially purchased candies. The secret is just to hide them well so that the dwarves do not swallow them all at once.

Ingredients for homemade chocolate candies: 200 gr milk chocolate, 200 gr bitter chocolate, 1.5 cups flour, 50 gr melted butter, 3 tablespoons acao, 3 eggs, 3 cups sugar, 2 teaspoons vanilla sugar, 1.5 teaspoon baking soda, 1 teaspoon grated salt. Preparation: Melt the chocolate together with half the amount of butter, then carefully add the flour, cocoa and baking soda.

Beat the rest of the butter together with the sugar, eggs and vanilla sugar. Wrap this composition in chocolate and leave everything in the fridge for an hour. Form the candies with a spoon for ice cream and place them on a tray lined with baking paper. Bake the candies in the hot oven for 10 minutes. Leave them on the tray for 2 minutes and then peel them off the baking paper. Ready! Good appetite!


Coconut milk

The coconut is a symbol of exoticism, but now it is within our reach and it is a shame not to use it. Of course, its core can be eaten as such, as a healthy snack, or you can make coconut milk or coconut butter.

But first you need to know how to choose coconut. It should not have visible cracks and when you shake it to hear the liquid inside, if you hear a bang, the pulp has come off and means it is old. I have friends who threw the nut upstairs to undo it anyway, so we wouldn't hit a neighbor. Start by forming a hole in one of the walnut holes, the soft one, and drain the water into a glass. If the water is sour, it tastes bad, don't bother to open it, the pulp won't be good either. Otherwise, cut the middle of the walnut with a serrated knife (I used the knife), then tap lightly with a hammer or twister. Thus, the pulp will come off a little, but the walnut will crack immediately after. To peel off the pulp, you can cut it inside the shell and then peel it with a knife. There is also the option of baking it to come off more easily, but then it is no longer raw.

From a coconut we can get a liter of coconut milk and a bowl of pulp (coconut flakes can be dried in the oven) that can be used for candy, countertops or other sweets, or about 200 grams of coconut butter, a bowl of flakes and a liter of coconut water, which fits perfectly on these heats.

To obtain the coconut butter, I put the coconut pieces in the blender with 1.2 l of lukewarm water and stirred them for 1-2 minutes. I strained the milk through a strainer bag (or folded gauze) and left it overnight in a jar with a lid. In the morning the butter was chosen over the liquid. Being hardened, I took it lightly with a teaspoon. And then I made chocolate out of it :).
